There are cookbooks that teach me how to cook a new cuisine (I'd like a good one on Vietnamese cookery!), ones that have clever and creative dishes that I will never make, but inspire me to try something similar, ones that serve as a reference when I make something I haven't made in decades (so I don't forget an ingredient), and ones I sit down with and thumb through, trying to find *something* that sounds good (or a way to use up foods that are starting to grow old.) This one does pretty well in all these regards.
My late first wife baked up a storm every December, and I was recruited to help, so I have *sorta* made Christmas desserts, but she was really in charge. I'm pretty good with entrees and side dishes, and I get a lot of compliments on my bread, but I'm through grieving for her, and want to learn this other branch of baking.
You know, Kindle really needs the ability to scribble in the margins before it will be a great platform for cookbooks; my paper cookbooks always had "2 eggs" crossed out and "3 eggs" substituted, nut I never have seen anyone carry a paper cookbook into Kroger. There are a lot of ingredients - rum, nutmeg, anise, eggnog - that I don't use otherwise, so I pulled it out while shopping and three, count 'em, three ladies told me that was a clever idea. because if they don't have an ingredient for recipe A, I can get the ingredients for recipe B instead.
Which brings me to another point. Many of the cookbooks for Kindle are obviously "stolen" recipes. They'll measure ingredients in cups, then in milliliters for another recipe. Or they will ask for name brand products. If the recipe calls for Bob White and I can only find Karo, it's all corn syrup, right? But substituting Cool Whip for Reddi Whip or Dream Whip changes the flavor and texture.
This cookbook, however, is well-written and well-edited. I'd bet that the author has made all these recipes year after year. In one case, she specifies Solo brand pie and cake filling, which I've never seen for sale (Walmart sells 6-packs of 12-ounce cans for about $20), but at the end of that recipe, she says she specifies that brand because it's significantly better. I can accept that; if you were to ask for my light honey rye bread recipe. I'd tell you to use Robin Hood light rye flour, because the others don't taste the same. Cam substitutions be made? Sure! - but I've been warned.
A couple of the recipes say to use box cake mix, or box cake mix with pudding. She essentially says your scratch recipe cake is fine, but the other ingredients take charge, and effort thrown into making a great scratch cake will be wasted.
Lori Burke has gone to the effort to have a linked table of contents. It's kind of a pain to build a linked TOC, so many cookbooks list the recipes without being able to click on the title.
So is it a perfect cookbook? No. She has some Polish Christmas treats I've never heard of. Perhaps I've eaten them, but I don't know; maybe I know the dessert under a different name. It would be *really* nice if the recipes were accompanied by great photos. Instead, there are none at all. Gosh darn it, Ms. Burke! You have come *so* much closer than any other Kindle cookbook I've seen.
There are a lot of great recipes online, and when I find one I really like, I cut-and-paste into an increasingly large file on my word processor, save it in Rich Text Format, and then convert it to a Kindle (MOBI format) book with Calibre. My own cookbook has been the only cookbook that has a permanent berth on my Kindle, convenient for shopping, cooking - and for sharing recipes with friends. At least for the Advent season, Lori Burke's cookbook is also remaining "local", not archived.. And maybe longer; I suspect one can eat chocolate peppermint cake year around.


My ideal for this year is to not have to leaf through lots of different cookbooks and have them cluttering up the kitchen. This book collects most of them in one place. There are:
- the classic sugar cookies (with variations and different icing options)
- an different spin on our usual macaroons with the Amaretti ai Pignoli (almond macaroons with pine nuts)
- a delightful (and time saving) approach to thumbprint cookies that will add lots of color and creativity to our cookie making
- Chocolate Peppermint Cake (with peppermint schnapps, coffee and cocoa, how can you possibly go wrong!)
and several things that I'm aching to try, like eggnog cheesecake.
The directions are clearly written and well organized. There are ideas and tips on how to make the process successful, but best of all, there is a selection of divine baked goods that will make our Christmas Extravaganza extravagant!
